Blend made with 100% Italian stone-ground flour – type 1 with the addition of wheat germ, not heat-treated, and broadleaf bran. Wheat germ, or embryo, is the inside part of the grain that preserves the nutrients. Broadleaf bran, on the other hand, is the integument of the grain in the form of “leaves” of irregular shape and brown in colour; this is what gives the finished product a rustic appearance and flavour
